It’s always interesting to see experiments lasting 30 days! I always feel it takes about 45 days to really notice any changes and start to get good data on things like this. I did Keto before last year and lost about 15 pounds but it did take quite a few months. But I did “cheat” quite a bit with keto snacks which is why I stopped in the end. This makes me want to give it another try and get all the same data that you did though!
